Beef with Black Bean Sauce - Serves 4
What You'll Need:
- 750g (1 1/2lb) rump steak
- 1 egg white
- 1 tablespoon dry sherry
- 2 tablespoons soy sauce
- 1 teaspoon corn flour
- 1/3 cup oil
- 4 shallots |
- 1 red pepper
- 1/3 cup sliced bamboo shoots
- 1 teaspoons curry powder
- 1 tablespoon canned black beans
- 1/3 cup water
- 2 teaspoons corn flour extra
- pinch sugarl |

1. Trim away any fat from steak. Cut
steak into 5cm x 5mm (2in x 1/4in) strips. Combine in bowl
with egg white, sherry, soy sauce and corn flour, mix well.
Stand 30 minutes. |

2. Put beans in bowl, cover with water,
stand 15 minutes, drain and rinse under cold running water.
Put on to plate, add sugar ad one teaspoon water, mash well.
Chop shallots into 2.5cm (1in) pieces, cut pepper in half,
remove seeds, cut each half into thin strips. |

3. Add two tablespoons oil to pan or wok,
add shallots, red pepper, bamboo shoots and curry powder,
sautИ two minutes, remove from wok. Heat remaining oil in
wok, add meat and marinade, cook until browned. |

4. combine well. Blend extra corn flour with
remaining water, add to wok, stir until mixture boils and
thickens. |
